Spam Fried Rice

Don’t judge me, I love Spam.

I used to stress so much over making homemade fried rice. But now that I've made it a couple of times, I've found a way to make to make it that I'm happy with. I thought this recipe would be perfect for quarantine since I just used a can of Spam I had, some frozen edamame, eggs, onion, garlic and scallions. My favorite thing to do when serving is top it off with some sriracha and toasted sesame seeds. Below is the method I usually follow with an (approximate) ingredient list. I kind of tend to just throw in whatever amounts feel right at the moment.

Ingredients:

  • 1 can of Spam (I used the Spam with bacon)

  • 3-4 cups cooked rice (3 cups cooked seems to be the right amount for two meals for my husband and I)

  • about 3 tbsp of unsalted butter

  • 2 eggs

  • about 1 cup frozen edamame

  • 1/2 of a large yellow onion

  • 4 cloves of garlic

  • 2 scallions

  • 1 and 1/2 tbsp of soy sauce (I used less than the original recipe because of all of the salt from the Spam)

  • dash of toasted sesame oil

  • Kosher salt and freshly cracked black pepper

  • Sriracha and toasted sesame seeds to serve

Process:

1.) Make the rice in advance: I always make my rice in my Instant Pot at least the night before and leave it in the fridge to dry out. You could make it the morning of, but you have to make sure it dries out or else your fried rice will end up a sticky mess, and the grains of rice won't separate properly and crisp up when frying. I also always use short grain rice. For this one I used fragrant Jasmine rice.

2.) Fry the ingredients in batches - fast and at a high temp.: For fried rice, I've learned its best to fry your ingredients in stages and at a high temperature. So I fried the spam first in oil to get it crispy, transferred it to a plate, and then scrambled the egg and then transferred that to a plate. Next I added the veggies, garlic and onion. Next, I stir fried the rice, soy sauce and green onions for a few minutes to crisp up the rice and then added the eggs back in. I put the toasted sesame oil in last after I turned off the heat.
